Mmmmmmmarshmallows


Homemade marshmallows from Alton Brown's most excellent recipe on the Food Network website. My recomendations:
  • Use a stand mixer. You have to whip this stuff for 15 minutes!

  • After spreading, let sit for at least 8 hours. Me personally, I don't use a baking pan. I spread it out on a cookie sheet in a more or less uniform mass. You get some interesting shapes that way.

  • Try, just try to let them age for a day or two in an airtight container. The cornstarch and confectioner's sugar dries them out a little, giving them a springier, more marshmallow-y texture.
